
SUMMER BERRY OAT CRUMBLE



INGREDIENTS
- 1/3 cup all-purpose flour
- 1/2 cup brown sugar ,packed
- 1/3 cup granulated sugar , plus 1/2 cup sugar for topping
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 8 tablespoons stick butter
- 1/2 cup old fashioned oats meal
- 1/2 cup sliced almonds
- 6 cups fresh mixed berries (any combination of blueberries, raspberries and blackberries)
- 3 tablespoons cornstarch
- 1 tablespoon lemon juice
DIRECTIONS
Preheat oven to 375 degree F. Spray a 9x9-inch (1.5 quart) baking dish with cooking spray.
Pulse flour, brown sugar, 1/3 cup granulated sugar, cinnamon and salt in the bowl of a food processor. Pulse to combine. Add butter and pulse until it forms crumbs. Transfer to a bowl and stir in oats and almonds.
Toss berries with sugar, cornstarch and lemon juice. Transfer mixture to the prepared baking dish.
Top the fruit with the oat mixture by squeezing handfuls of the mixture in your hand, creating big clumps and breaking up the big clumps slightly as you scatter them over the top of the berries. Place on a baking sheet and bake until fruit juices are bubbling, and topping is golden brown, about 50 to 60 minutes. Cover with foil if the topping is browning too much before the fruit is bubbly. Transfer to a wire rack and let cool at least 20 minutes before serving, if desired, with ice cream or whipped cream
