
CHEESE AND CHOCOLATE FONDUE PARTY



INGREDIENTS
- 1 lb Swiss cheese ,shredded
- 1 tablespoon plus 1 teaspoon corn starch
- 1 garlic clove, halved
- 1 cup dry white wine
- 2 teaspoons fresh lemon juice
- 1 cup heavy whipping cream
- 12 oz milk chocolate ,chopped
- 1 teaspoon vanilla
- 1/8 teaspoon salt
DIRECTIONS
To make the Easy Swiss Cheese Fondue: Place cheese and cornstarch in a large bowl and toss to coat. Rub the inside of a heavy, medium saucepan with the cut sides of the garlic (discard remaining garlic or save for another use). Add wine and bring to a gentle simmer over low heat. Add 1/2 cup of the cheese, whisking constantly, until smooth. Continue adding the cheese, 1/2 cup at a time, making sure each addition is completely melted before adding the next. Transfer to a fondue pot. Keep warm and serve with your choice of dippers.
Dipper ideas: Cubes of rustic bread, browned chunks Kielbasa, cubes of ham, blanched broccoli and cauliflower, boiled new potatoes, cherry tomatoes or chunks of apples.
Tips for Swiss Cheese Fondue: If your fondue is too thin, whisk in more shredded cheese. If your fondue is too thick, whisk in more wine, warmed in a saucepan or microwave. If your fondue is lumpy or gritty or if the cheese is not combining smoothly with the wine, whisk in another teaspoon or two of lemon juice. If your fondue separates, return it to the stove and reheat, whisking vigorous, until it comes back together. Leftover cheese fondue can be reheated in a saucepan, stirring frequently, over low heat. Make sure you leave a thin layer of cheese on the bottom of your fondue pot and keep the pot over the heat until the cheese has browned. Remove from heat and let the cheese cool a bit before prying it off of the bottom of the pot. Experienced fondue eaters know this is the best part!
To make the Creamy Milk Chocolate Fondue: In a medium saucepan, bring the cream to a simmer over medium heat. Add the chocolate, vanilla and salt and remove from the heat. Let the chocolate stand for 2 to 3 minutes, until melted. Stir until smooth. Transfer to a fondue pot and serve with your favorite dippers
Dipper ideas: Cubes of brownie and pound cake, mini donuts or donut holes, pretzel sticks, potato chips, Oreo cookies, large marshmallows, banana chunks or strawberries.
Tips for Milk Chocolate Fondue: If serving this fondue in a fondue pot over a flame, make sure to monitor it closely, as milk chocolate burns easily. You can also serve the fondue in a warm ceramic bowl, rewarming it in a saucepan, if necessary. Leftovers are easy to reheat in the microwave. Just use 70% power in 30 second increments, stirring each time. Plus, reheated leftovers are delicious spooned over ice cream. Milk chocolate makes for an ultra-creamy, family friendly fondue, but feel free to substitute dark or semi-sweet chocolate for the milk chocolate in this recipe, if it is your preference.
