THAI-STYLE SHRIMP SALAD

INGREDIENTS
  • 1/4 cup fresh lime juice
  • 1 tablespoons sugar
  • 1 teaspoon sea salt
  • 2 cloves garlic minced
  • 1/2 teaspoon red pepper flakes
  • 1 1/2 pounds large uncooked shrimp
  • 2 organic romaine hearts cut into 1" ribbons
  • 2 cups shredded red cabbage
  • 1 each English cucumber sliced
  • 1/2 cup organic fresh mint
  • 1/2 cup organic fresh basil leaves
  • 1/2 cup organic fresh cilantro

DIRECTIONS

In a small jar with a tight-fitting lid combine lime juice, 1/4 cup water, sugar, salt, garlic and pepper flakes. Cover and shake well.

In a large nonstick skillet heat oil over medium heat. Add shrimp and saut� until pink and cooked through, about 2 minutes.

In a large bowl toss together romaine and cabbage with dressing to taste. Pile onto serving platter. Arrange cucumber slices around greens.

Toss shrimp with some of the dressing and arrange on top of the greens. Garnish with mint, cilantro, and basil.
