
BUTTERSCOTCH APPLE MUFFINS



INGREDIENTS
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 2 large eggs
- 1/3 cup Nestle Toll House morsels butterscotch flavored
- 1/2 teaspoon ground cinnamon
- 1/2 cup Vegetable oil
- 1 1/2 cups all-purpose flour
- 1/4 cup coffee Mate Butterscotch Latte Flavor Liquid Coffee Creamer
- 1 cup chopped, peeled apple
DIRECTIONS
Preheat oven to 350 degrees F. Line 12 muffin cups with paper liners.
Combine flour, cinnamon, baking soda and salt in a medium bowl. Whisk together sugar, oil and Coffee-Mate Butterscotch Latte Flavor Liquid in a large bowl. Whisk in eggs. Stir in flour mixture. Stir in apple. Spoon 1/4 cup batter into each prepared muffin cup. Sprinkle each with about 10 morsels.
Bake for 20-25 minutes or until wooden pick inserted in center comes out clean. Serve warm.
