
3-CHEESE CHICKEN PARM SANDWICHES



INGREDIENTS
- 8 small boneless, skinless chicken breasts (about 2 pounds)
- 2 tablespoon olive oil
- 1 jar Prego tomato sauce
- 8 slices mozzarella cheese (about 8 ounces)
- 2 tablespoons Culinary Circle Grated Parmesan Cheese
- 8 Pepperidge Farm hamburger buns
DIRECTIONS
Season the chicken with salt and pepper. Heat the oil in a 12-inch skillet over medium-high heat. Add the chicken and cook for 6 minutes or until well browned on both sides (you may want to brown the chicken in 2 batches to avoid crowding the skillet). Remove the chicken from the skillet.
Pour the sauce into the skillet and heat to a boil. Return the chicken to the skillet and turn to coat. Reduce the heat to low. Cover and cook for 8 minutes or until the chicken is done.
Top the chicken with the mozzarella cheese. Cover and cook until the cheese is melted. Sprinkle with the Parmesan cheese and serve on the buns.
