STEAK AU POIVRE

INGREDIENTS
  • 4 Wild Harvest premium angus beef tenderloin filets
  • 1/2 cup black peppercorns
  • 1/3 cup cognac
  • 2 tablespoons Essential Everyday unsalted butter
  • 1 cup Essential Everyday heavy cream
  • 1/4 cup kosher salt

DIRECTIONS

Using a mortar and pestle or the bottom of a heavy saute pan, coarsely crush the peppercorns.

Season all sides of the steak with salt. Spread the peppercorns in an even layer on a plate. Press both sides of the steak into the peppercorns, set aside.

In a medium skillet over medium heat, melt butter until foaming.

Place the steaks into the pan and cook for 3-4 minutes on each side for medium rare.

Remove steaks from the pan to rest. Pour out excess fat and add the Cognac to the pan.

Carefully ignite the Cognac using a long match or long lighter. Gently shake the pan until the flames die out.

Return the pan to medium heat and add the cream. Bring to a boil and reduce the sauce until thick enough to coat the back of a spoon, about 5 to 6 minutes

Season sauce with salt and serve over rested steaks.
