
TURKEY AND CRANBERRY QUESADILLAS

INGREDIENTS
- 1/2 cup cooked shredded skinless dark meat turkey
- 1/4 cup cranberry sauce
- 1/2 cup Bel Gioioso shredded asiago cheese
- 1/4 cup shredded Swiss cheese
- 2 Food for Life Ezekiel organic sprouted grain tortillas
DIRECTIONS
In a small bowl, mix together the turkey and cranberry sauce.
In another small bowl, mix the Asiago and Swiss cheeses together.
Place tortillas on a cutting board and lightly fold in half so you can see the midline. Open and evenly sprinkle cheese just on one side of the midline on both tortillas. Divide turkey cranberry mixture between the two quesadillas and spread evenly on top of the cheese. Fold the tortillas again to close.
Heat a nonstick skillet over medium high heat and place each quesadilla, cheese side down in the hot pan. Cook 2 minutes, until cheese melts, use a spatula to turn each quesadilla and cook 2 more minutes. Both sides should be a little brown and crisp.
Transfer quesadillas back to the cutting board and cut each in half with a heavy chef’s knife. Enjoy warm with a green salad on the side.
