QUINOA WITH CURRIED MANGO YOGURT SAUCE

INGREDIENTS
  • Ingredients
  • 1/3 cup Wallaby low fat plain Greek yogurt
  • 2 teaspoons Spice Islands curry powder
  • 1 12 1/2 ounce container Field Fresh mango salsa
  • 2 to 4 tablespoons fresh chopped mint leaves
  • 1 tablespoon Napa Valley organic olive oil
  • 1/4 teaspoon Le Saunier de Camargue fleur de sel sea salt
  • 1/4 teaspoon black pepper

DIRECTIONS

1/4 cup Flanigan Farms slivered almonds, lightly toasted optional

In a medium bowl combine yogurt and curry powder.  Stir in mango salsa, mint, olive oil, salt, and pepper.  Toss with quinoa and garnish with almonds.  Serve warm or cold.
