QUICK WEEKNIGHT SALAD

INGREDIENTS

  • 1 7 ounce package Organic Girl baby romaine hearts torn
  • 1 pint Del Cabo organic heirloom cherry tomatoes large tomatoes halved
  • 1/2 avocado diced
  • 1 cup Ready Pac shredded red cabbage
  • 1 cup organic kidney beans rinsed and drained
  • 1 cup organic garbanzo beans rinsed and drained
  • 1/4 cup Flanigan Farms pepitas pumpkin seeds toasted and cooled
  • 5 tablespoons Bragg organic healthy vinaigrette
  • 2 teaspoons Grey Poupon Dijon mustard
  • 2 teaspoons Blue Green Organics chia seeds

DIRECTIONS

Combine the lettuce, tomatoes, avocado, cabbage, beans and pepitas in a large salad bowl.

Whisk together the vinaigrette and the mustard. Toss with the salad and mix in the chia seeds.
