
SNAP PEAS WITH HERBS

INGREDIENTS

- 4 sprigs Bon Apptit fresh organic mint plus 2 teaspoons minced leaves
- 2 8 ounce bags Manns stringless sugar snap peas
- 1 teaspoon Napa Valley organic olive oil
- 1 teaspoon minced Italian parsley
- pinch sea salt
- 1/8 teaspoon black pepper
DIRECTIONS
Fill a medium pot with a lid with one inch of water. Add four mint sprigs. Place a steamer basket in the pot, cover and cook over high heat. Bring to a boil and add snap peas. Cook four minutes, until peas are bright green and plump, not shriveled.
Immediately transfer peas to a serving bowl and toss with olive oil, remaining mint, parsley, salt and pepper.
