CARROT AND TOMATO SALAD WITH LIME DRESSING


Serves : 8

INGREDIENTS
  • 2 tablespoons fresh lime juice about 1 large lime
  • 1 teaspoon Spice Hunter organic ground cumin
  • 1 tablespoon Napa Valley organic olive oil
  • 2 8 ounce bags Ready Pac shredded carrots or 4 large carrots shredded in the food processor
  • 1 12 ounce bag Nature Sweet cherry tomatoes quartered
  • 2 tablespoons cilantro leaves chopped

DIRECTIONS

In a small cup or bowl, whisk together the lime juice, cumin and olive oil.

Combine carrots and tomatoes in a serving bowl. Toss with lime juice dressing and sprinkle chopped cilantro over the top. Refrigerate until ready to serve.
