
SPANISH WATERMELON SALAD

INGREDIENTS
- 1 package Juice Harvest cut watermelon hearts each heart diced into 16 bite sized cubes to make 3 cups
- 1/2 medium cucumber peeled and diced like the melon to make 1 cup
- 2 tablespoons fresh mint leaves slivered lightly packed
- 2 tablespoons fresh lime juice about 1 medium lime
- 1/8 teaspoon coarse ground black pepper
- 1/8 teaspoon kosher salt
DIRECTIONS
Combine watermelon, cucumber and mint in a large bowl. Pour the lime juice over the fruit and season with pepper and salt. Gently toss or cover and shake to mix without crushing the watermelon. Serve immediately or refrigerate before serving. Garnish with whole mint sprigs if desired.
