CHOLESTEROL LOWERING STIR FRY

INGREDIENTS

  • 1 tablespoons Napa Valley organic olive oil
  • cup Pacific Natural Foods organic vegetable broth
  • teaspoon Spice Islands crushed red pepper flakes
  • 1 small bunch asparagus trimmed cut on the bias into 1 inch pieces
  • pound fresh small okra stems cut off close to the stem end
  • 1/3 pound fresh shiitake mushrooms stems removed thinly sliced
  • 2 cloves Melissas organic garlic minced
  • 1/8 teaspoon salt
  • teaspoon Spice Islands fine grind black pepper

DIRECTIONS

Heat a large 12 inch skillet over medium high heat and add the oil, broth and red pepper flakes. When hot, add the asparagus and okra and cook, stirring often, two minutes. Add mushrooms and garlic and cook about five more minutes, until asparagus and okra are fork tender. Remove from heat and season with salt and pepper.
