
SAUTEED MIXED MUSHROOMS

INGREDIENTS
- 3 tablespoons Kikkoman light soy sauce
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1/2 teaspoon sugar
- 1/8 teaspoon Pepper
- 2 cloves Melissas organic garlic crushed in a garlic press
- 1/2 pound shiitake mushrooms stems removed
- 1/2 pound oyster mushrooms 2 packages divided into bunches about the size of each shiitake
- 2 packages enoki mushrooms bottoms trimmed divided into nickel sized bunches
- 1 tablespoon canola oil
DIRECTIONS
Whisk together the soy sauce, lemon juice, lemon zest, sugar, pepper, and garlic, set aside.
Heat a wok or skillet over medium high heat with canola oil. Add in shiitake mushrooms. Cook, stirring for 1 minute. Add the oyster mushrooms and cook 1 more minute. Add the enoki mushrooms, cook 2 more minutes and pour in the sauce. Toss well and remove from heat. Remove mushrooms with a slotted spoon and serve.
