
SPINACH, CHICKEN, AND RASPBERRY SALAD

INGREDIENTS

- 2 teaspoons orange zest from an organic orange
- 2 tablespoons juice from an organic orange
- 1 1/2 tablespoons fresh lime juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 teaspoons Napa Valley organic olive oil
- 2 5 1/4 ounce bags Ready Pac organic Florentine blend spinach
- 1 pound Gelsons Finest rotisserie lemon and herb chicken skin removed meat shredded
- 4 green onions thinly sliced
- 1 cup fresh cilantro leaves chopped lightly packed
- 1 small avocado diced
- 1 package fresh raspberries
- 1/4 cup Flanigan Farms blanched hazelnuts toasted and chopped
DIRECTIONS
In a small cup, whisk together the orange zest, orange juice, lime juice, salt, pepper, and olive oil. Set aside.
In a large salad bowl, combine spinach, chicken, green onions, cilantro, avocado, raspberries, and hazelnuts. Whisk the dressing and toss with the salad before serving.
