SPINACH, CHICKEN, AND RASPBERRY SALAD

INGREDIENTS

  • 2 teaspoons orange zest from an organic orange
  • 2 tablespoons juice from an organic orange
  • 1 1/2 tablespoons fresh lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 teaspoons Napa Valley organic olive oil
  • 2 5 1/4 ounce bags Ready Pac organic Florentine blend spinach
  • 1 pound Gelsons Finest rotisserie lemon and herb chicken skin removed meat shredded
  • 4 green onions thinly sliced
  • 1 cup fresh cilantro leaves chopped lightly packed
  • 1 small avocado diced
  • 1 package fresh raspberries
  • 1/4 cup Flanigan Farms blanched hazelnuts toasted and chopped

DIRECTIONS

In a small cup, whisk together the orange zest, orange juice, lime juice, salt, pepper, and olive oil. Set aside.

In a large salad bowl, combine spinach, chicken, green onions, cilantro, avocado, raspberries, and hazelnuts. Whisk the dressing and toss with the salad before serving.
