CINNAMON APPLE ACORN SQUASH


Serves : 2

INGREDIENTS
  • 1 acorn squash washed and split lengthwise
  • 1/8 teaspoon salt
  • 2 tablespoons Santa Cruz Organic cinnamon apple sauce

DIRECTIONS

. Preheat oven to 375 F. Add 1/4 cup water to a glass baking dish. Scoop the seeds and strings out of the squash. Place squash cut side down in dish and bake until tender, about 30 to 40 minutes.

Turn cut side up and season with a little salt. Use a spoon to gently scrape the flesh away from the rind and mash it up a bit. Mix 1 tablespoon of applesauce into each half. Return to the oven and cook until heated through, about 10 minutes. Serve in their very own squash bowls.
