
ROASTED RED PEPPER PESTO

INGREDIENTS
- 1 container Gelsons finest roasted red peppers drained well
- cup fresh cilantro leaves
- 3 olive oil
- 3 balasmic vinegar
- 1 small garlic clove chopped
- dry mustard
- ground coriander
- Pinch of ground cinnamon
- cup whole toasted almonds about 2 oz
- Sea salt and fresh ground pepper to taste
DIRECTIONS
Pure first 8 ingredients in a food processor until almost smooth.
Add nuts and process until finely chopped, but no ground. Season with salt and pepper.
Toss with pasta, vegetable or chicken.
