ROASTED RED PEPPER PESTO


Serves : 1

INGREDIENTS
  • 1 container Gelsons finest roasted red peppers drained well
  • cup fresh cilantro leaves
  • 3 olive oil
  • 3 balasmic vinegar
  • 1 small garlic clove chopped
  • dry mustard
  • ground coriander
  • Pinch of ground cinnamon
  • cup whole toasted almonds about 2 oz
  • Sea salt and fresh ground pepper to taste

DIRECTIONS

Pure first 8 ingredients in a food processor until almost smooth.

Add nuts and process until finely chopped, but no ground. Season with salt and pepper.

Toss with pasta, vegetable or chicken.
