SWEET NECTARINE NACHOS


Serves : 4

INGREDIENTS
  • 4 soft taco sized flour tortillas
  • 1 tsp cinnamon
  • 2 tsp sugar
  • 1 pound nectarines chopped
  • 2 cups Vanilla pudding made with fat free or 1 milk
  • Water for wetting tortillas

DIRECTIONS

Prepare pudding as directed. Allow to set.

Combine sugar and cinnamon in a small bowl and preheat oven to 350 degrees F.

Brush tortillas with water just until slightly moist. Sprinkle with sugar mixture. Cut each tortilla into 8 wedges.

Spread wedges on a cookie rack and place in preheated oven. Bake for 10 minutes or until crispy.

Serve as individual portions in wide mouthed bowls. Spoon 1 cup pudding into the bowl and cover with half of the chopped nectarines. Garnish with the 4 chips around the edge of the bowl.
