
TUSCAN GAME HENS

INGREDIENTS
- 6 Rock Cornish hen, rinsed & patted dry with paper towels
- Salt and freshly ground black pepper, to taste
- 1 1/4 thick slice of prosciutto cut into 6 equal pieces
- 6 bay leaves
- 6 fresh sage leaves
- 18 pitted Kalamata olives
- 2 tablespoons Culinary Circle Extra Virgin Olive Oil
- 6 very thin slices of prosciutto
DIRECTIONS
Preheat oven to 400?F.
Season game birds inside and out with sea salt and pepper.
Tuck a piece of 1/4 inch thick prosciutto in cavity of each hen, plus 1 bay leaf, 1 sage leaf, and 3 olives.
Truss game hens, rub outside skin with olive oil.
Wrap a thin slice of prosciutto around game hen, stretching prosciutto slightly.
Arrange stuffed game hens in a baking dish, place in oven and roast for 15 minutes.
Reduce heat to 325?F. and roast for additional 30 to 45 minutes, until juices run clear when hens are pierced with a fork.
Remove from oven and serve immediately.
