CHEDDAR BACON RANCH POTATO SALAD

Serves : 4-6 servings

INGREDIENTS
  • 1 (24 ounce) bag organic petite yellow potatoes
  • 1/2 cup organic ranch dressing
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon organic ground black pepper
  • 1/4 cup organic fresh chives
  • 3/4 cup shredded sharp Cheddar cheese
  • 6 slices thick sliced bacon

DIRECTIONS

Place potatoes in a 6-quart stock pot and add water until above potatoes by 2-inches. Bring potatoes to a boil then reduce to medium heat. Cook until tender, about 10 minutes.

Meanwhile, fry bacon in a medium skillet according to package directions, set aside.

Drain potatoes and let cool in refrigerator on a sheet tray, about 20 minutes. While the potatoes are cooling crumble bacon and chop chives.

Once potatoes have cooled dice potatoes into quarters. In a medium size bowl combine potatoes, ranch dressing, salt, pepper, chives, cheddar cheese, and bacon until well combined

Chill and serve.
