VEGETARIAN TOMATO SOUP

INGREDIENTS
  • 2 tablespoons Pure Wesson® Canola Oil
  • 1/2 cup chopped yellow onion
  • 2 tablespoons Hunt's® Tomato Paste
  • 2 cans (14.5 oz each) Hunt's® Stewed Tomatoes, undrained
  • 1 can (14 oz each) vegetable broth
  • 1/2 teaspoon dried Italian seasoning
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground red pepper
  • 2/3 cup seasoned cheese and garlic croutons

DIRECTIONS

Heat oil in large saucepan over medium-high heat; add onion. Cook 2 to 3 minutes or until onion is tender. Add tomato paste; cook and stir until fragrant and lightly browned.

Add undrained tomatoes, broth, Italian seasoning, salt and pepper to saucepan; stir to combine. Reduce heat and simmer 15 minutes. Place half of tomato mixture in blender container; pulse until smooth. Repeat with remaining mixture. Top each serving with croutons.
