TOMATO-BASIL ROASTED FISH

INGREDIENTS
  • 1 4 oz each pound cod or whitefish fillets
  • 6 tablespoons Parkay® Original Squeeze, divided
  • 10 mixed red and yellow cherry tomatoes, halved
  • 1/2 cup chopped fresh basil leaves
  • 4 ounces sliced mozzarella cheese
  • 1/2 cup freshly grated Parmesan cheese

DIRECTIONS

Preheat oven to 425°F. Position oven rack to the top of oven.

Place fish on parchment paper-covered baking sheet. Drizzle evenly with 3 tablespoons of the Parkay; top each fillet evenly with tomatoes, basil and mozzarella cheese. Sprinkle with Parmesan cheese; drizzle with the remaining 3 tablespoons Parkay.

Place baking sheet on top rack of preheated over and bake fish for 20 minutes or until cheese is golden brown and fish flakes easily with fork.
