
THAI-STYLE COCONUT CHICKEN SOUP



INGREDIENTS
- 1 can (14.5 oz each) Hunt's® Petite Diced Tomatoes, undrained
- 1 can (13.5 oz each) lite coconut milk
- 1 cup shredded cooked chicken
- 1/2 cup water
- 2 tablespoons fish sauce
- 2 tablespoons red curry paste
- 1 teaspoon chili garlic sauce or Sriracha sauce
- 6 thin slices peeled fresh ginger
- Fresh cilantro, optional
DIRECTIONS
Combine all ingredients, except cilantro, in medium saucepan. Cook over medium to medium-low heat 15 minutes or until hot and flavors have blended, stirring occasionally.
Divide soup between 4 bowls. Garnish with cilantro, if desired.
