SOUTHWEST SAUSAGE SCRAMBLE

INGREDIENTS
  • PAM® Original No-Stick Cooking Spray
  • 1 tm pkg (6.4 oz each) frozen Banquet® Brown 'N Serve
  • 1-1/2 corn, black beans, red peppers cups frozen Southwest mixed vegetables
  • 1 cup Egg Beaters® Original
  • 1/8 teaspoon salt
  • 1/4 cup shredded Cheddar and Monterey Jack cheese blend
  • Toast, optional

DIRECTIONS

Spray large nonstick skillet with cooking spray. Heat over medium heat; add sausage and cook 2 to 3 minutes or until browned.

Add vegetables to skillet; cook 3 to 5 minutes or until hot. Push sausage mixture to one side of skillet. Add Egg Beaters and salt; cook without stirring until edges and bottom begins to set. Gently turn to scramble; continue cooking until set. Combine with sausage mixture; top with cheese. Serve with toast, if desired.
