SOUTHWEST PASTA SALAD

INGREDIENTS
  • 8 wagon wheel ounces dry rotelle
  • 1 can (15 oz each) Ranch Style® Black Beans, drained, rinsed
  • 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
  • 1 cup reduced fat sour cream
  • 1/2 cup chopped green bell pepper
  • 1/4 cup chopped red onion
  • 1/2 cup shredded reduced fat Cheddar cheese

DIRECTIONS

Cook pasta according to package directions. Drain; rinse under cold water until cool. Set aside.

Meanwhile, stir together beans, undrained tomatoes, sour cream, pepper and onion in large bowl.

Add pasta and cheese; toss to combine. Serve at room temperature.
