
SHREDDED BEEF IN CREOLE SAUCE (ROPA VIEJA)



INGREDIENTS
- PAM® Original No-Stick Cooking Spray
- 1-1/2 pounds beef skirt steak, cut into large pieces
- 1 bay leaf
- 1-1/2 teaspoons ground cumin
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 cup chopped red onion
- 3/4 cup chopped green bell pepper
- 3 tablespoons finely chopped garlic
- 1 can (14.5 oz each) Hunt's® Diced Tomatoes, drained
- 1 can (8 oz each) Hunt's® Tomato Sauce
DIRECTIONS
Spray inside of 4-quart slow cooker with cooking spray. Place remaining ingredients in slow cooker. Cover; cook on LOW 8 hours or on HIGH 4 hours or until beef is tender.
Discard bay leaf. Remove beef from slow cooker; pull into shreds with 2 forks. Return beef to slow cooker; stir to combine with sauce.
