SAVORY WILD RICE

INGREDIENTS
  • 1 1 qt = 4 cups quart water
  • 3/4 cup wild rice, uncooked, rinsed and drained
  • 1/4 cup brown rice, uncooked
  • 1 tablespoon instant chicken bouillon granules
  • PAM® Original No-Stick Cooking Spray
  • 1 cup sliced fresh mushrooms
  • 1/2 1/2 med = about 1/2 cup medium red bell pepper, chopped
  • 1 teaspoon Fleischmann's® Original-stick
  • 2 tablespoons thinly sliced green onions
  • 1/8 teaspoon ground black pepper
  • Chopped fresh parsley, optional

DIRECTIONS

Combine water, wild rice, brown rice and bouillon in medium saucepan. Bring to a boil over high heat; cover. Reduce heat to low; simmer 55 minutes, or until wild rice kernels open. Drain; place in medium bowl. Cover to keep warm.

Spray medium nonstick skillet with cooking spray. Add mushrooms, bell peppers and Fleischmann's; cook over medium heat 5 minutes, or until bell peppers are crisp-tender, stirring frequently.

Add mushroom mixture, onion and pepper to rice mixture; mix lightly. Garnish with parsley, if desired.
