
ROSEMARY MARINATED SWORDFISH



INGREDIENTS
- 3 tablespoons thinly sliced green onions
- 2 tablespoons chopped fresh rosemary
- 2 tablespoons white wine vinegar
- 1 tablespoon water
- 1 teaspoon Worcestershire sauce
- 1-1/2 1-1/2 lb = 4 steaks pounds swordfish steaks, 3/4-inch thick
- PAMĀ® Grilling Spray
- 1/2 teaspoon salt
DIRECTIONS
Combine onions, rosemary, vinegar, water and Worcestershire sauce in large shallow dish; set aside.
Add fish to onion mixture in dish; turn to evenly coat both sides of fish. Cover. Refrigerate 2 hours to marinate, turning fish over after 1 hour. Remove fish from marinade; reserve marinade.
Spray cold grate of outdoor grill with grilling spray. Prepare grill for medium heat. Grill fish 4 minutes. Brush with the reserved marinade; turn fish over. Grill an additional 2 to 5 minutes or until fish flakes easily with fork. Sprinkle with salt just before serving.
