
POTATO AND SAUSAGE CROQUETTES (CROQUETAS DE PAPAS Y SALCHICHAS)



INGREDIENTS
- 2 cups Pure Wesson® Canola Oil
- 1-1/4 cups instant mashed potato flakes
- 1-1/3 cups hot water
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 cans (4.6 oz each) Libby's® Vienna Sausages, drained, mashed
- 3/4 cup Egg Beaters® Original, divided
- 1/2 cup dry unseasoned bread crumbs
DIRECTIONS
Heat oil in large saucepan over medium-high heat to 350°F.
Meanwhile, combine potato flakes and water in medium bowl; add salt, pepper, sausages and 1/4 cup Egg Beaters. Stir until blended. Divide mixture into 15 portions; shape into oval balls.
Place remaining 1/2 cup Egg Beaters in shallow dish; place bread crumbs in second shallow dish. Roll one third of balls in Egg Beaters; roll in bread crumbs, shaking to remove excess. Fry 2 to 3 minutes or until golden brown. Remove from pan; drain on paper towels. Repeat with remaining balls. Serve immediately.
