
CHILI HUEVOS RANCHEROS



INGREDIENTS
- 2 cans (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
- 1/2 sweet onion, small diced
- 2 tablespoons red wine vinegar
- 1 teaspoon granulated sugar
- 1 cup fresh cilantro leaves, divided in half
- 1/4 teaspoon kosher salt
- 1/8 teaspoon fresh cracked black pepper
- 8 6 inch corn tortillas
- 1 can (15 oz each) Wolf® Brand Chili With Beans, heated
- 12 slices bacon, cooked crisp
- 8 or scrambled eggs, fried to desired doneness
- 2 cups shredded smoked mozzarella cheese
- 1 avocado, pitted, peeled, medium diced
- 1/2 cup sliced green onions
DIRECTIONS
In a blender, add tomatoes, onion, vinegar, sugar, 1/2 cup cilantro leaves, salt and pepper and pulse 4 to 6 times on high until slightly chunky. Keep cool.
To Assemble: Heat tortillas on grill or in oven on high heat and layer them as follows: 1 tortilla, 2 tablespoons chili, 1 tortilla, 2 more tablespoons chili, 3 slices crisp bacon, 2 fried eggs, 1/2 cup cheese, 2 tablespoons avocado, 2 tablespoons green onions and 2 tablespoons cilantro.
