Total Time : 30 Minutes
Serves : 4

INGREDIENTS
  • 2-1/2 cups frozen unsweetened mixed berries
  • 1/4 cup water
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • PAM® Original No-Stick Cooking Spray
  • 2 eggs, separated
  • 1-1/2 cups all-purpose flour
  • 1-1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 cup lowfat buttermilk

DIRECTIONS

Stir together berries, water, sugar and cornstarch in small saucepan. Heat over medium heat, stirring occasionally until thickened and syrupy, about 8 minutes; set aside.

Spray grids of waffle iron with cooking spray; preheat according to manufacturer’s instructions. Beat egg whites in medium bowl with an electric mixer on medium-high speed until soft peaks form, about 2 minutes. Stir together flour, baking soda and salt in large bowl. Stir in egg yolks, buttermilk and melted butter until well combined. Gently fold egg whites into batter. Place batter on grids of waffle iron according to manufacturer’s instructions, cooking until golden brown. Serve immediately with berry sauce and Reddi-wip.
