
BEEF FILLET WITH BLUE CHEESE



INGREDIENTS
- 1/2 cup Parkay® Original Spread-tub
- 1 pkg (3 oz each) cream cheese, softened
- 1 green part only tablespoon sliced green onions
- 1-1/2 teaspoons Juice of 1 lemon
- 1 teaspoon hot pepper sauce
- 2 pkgs (4 oz each) Culinary Circle Crumbled Blue Cheese
- 2 2 slices = about 2 tbsp slices bacon, cooked, crumbled
- 1-1/2 6 oz each pounds beef tenderloin or filet mignon steaks
DIRECTIONS
Mix 1/2 cup Parkay, the cream cheese, onions, lemon juice and hot pepper sauce in medium bowl until well blended. Stir in blue cheese and bacon; set aside.
Preheat broiler. Melt 1 tablespoon Parkay in medium skillet over medium heat. Add steaks; cook 5 minutes on each side, or until steaks are cooked to medium-rare doneness (145°F). Transfer to aluminum foil-lined 8x8-inch baking pan; top each with 3 tablespoons of the blue cheese mixture.
Broil, 4 inches from heat source, 3 minutes, or until cheese mixture is golden brown.
