ARGENTINIAN POTATO PIE (PASTEL DE PAPAS)

INGREDIENTS
  • PAM® Original No-Stick Cooking Spray
  • 2 pounds Yukon Gold potatoes, peeled, cut into small pieces
  • 1 tablespoon salt
  • 1/3 cup Parkay® Original Spread-tub
  • 1-1/2 85% lean pounds ground round beef
  • 1-1/2 cups finely chopped white onion
  • 3/4 cup finely chopped green bell pepper
  • 1 can (8 oz each) Hunt's® Tomato Sauce
  • 1 teaspoon adobo seasoning blend
  • 1 teaspoon ground cumin

DIRECTIONS

Preheat oven to 425°F. Spray 2-1/2-quart shallow baking dish with cooking spray; set aside.

Place potatoes and salt in large saucepan; add water to cover. Cook over high heat 20 minutes or until tender. Drain; return potatoes to saucepan. Add Parkay; mash with potato masher until smooth.

Meanwhile, heat large skillet over medium-high heat. Add beef, onion and pepper; cook 10 minutes or until beef is crumbled and no longer pink, stirring occasionally; drain. Add tomato sauce, adobo seasoning and cumin; cook 2 minutes more or until hot and bubbly.

Pour beef mixture into baking dish; top evenly with mashed potatoes. Bake 10 minutes or until hot.
