
TRAIL MIX MONSTER COOKIES



INGREDIENTS
- 2 large organic large brown eggs
- 1 cup organic light brown sugar
- 2/3 cup organic unsalted butter
- 1 tablespoon organic pure vanilla extract
- 1 1/2 teaspoons baking soda
- 3/4 teaspoon kosher salt
- 1 18 ounce cup organic creamy peanut butter
- 1 1/4 cups old fashioned oats
- 1 1/3+1/4 cups organic unbleached all-purpose flour
- 2 (3 ounce) package 72% Cacao Belgian Dark Chocolate
- 3/4 cup dried mixed fruit
- 1/2 cup cashews or peanuts
DIRECTIONS
Preheat oven to 350 degrees. In a bowl of a stand mixer, cream butter and sugars until light and fluffy; 3-4 minutes.
Add vanilla and peanut butter, beating until well combined.
Add eggs one a t a time, beating until fully incorporated after each addition.
In a medium bowl, whisk together flour, baking soda and salt.
Add in flour mixture and mix until combined. Fold in chocolate, mixed fruit and nuts.
Line a baking sheet with parchment paper. Roll cookies into 1.5 oz balls. Bake for 10-12 minutes, until golden brown. Let cool for 5 minutes before transferring to a wire rack to cool completely.
