ARUGULA & MANDARIN ORANGE SALAD

with Balsamic Vinaigrette

INGREDIENTS
  • 1 15 ounce can no sugar added Mandarin oranges
  • 5 ounces baby arugula leaves
  • 1/4 cup thinly sliced shallots
  • 1/4 cup sliced almonds
  • 1/4 cup crumbled reduced fat blue cheese
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon chopped fresh tarragon
  • 2 tablespoons Culinary Circle Extra Virgin Olive Oil

DIRECTIONS

Place 2 tablespoons liquid from oranges in a small bowl; set aside. Drain remaining liquid from oranges.

In large bowl, combine oranges with arugula, shallots, almonds and blue cheese; set aside.

Add vinegar, mustard and tarragon to small bowl with orange liquid; salt and pepper to taste. Whisk until well combined. While whisking, slowly drizzle olive oil into dressing; continue whisking until well combined.

Toss salad with vinaigrette; serve immediately.
