ROASTED PEAR SALAD

with Blue Cheese & Bacon

INGREDIENTS
  • 2 ounces Neufchatel cheese softened
  • 2 ounces crumbled reduced fat blue cheese
  • 1/4 cup sweetened dried cranberries chopped
  • 1/4 cup chopped walnuts toasted
  • 3 firmly ripe Anjou pears
  • 6 slices bacon
  • 1 5 ounce container arugula salad mix
  • 1 shallot sliced
  • 1/4 cup light raspberry vinaigrette dressing

DIRECTIONS

In small bowl, combine cream cheese, blue cheese, cranberries and walnuts; beat with an electric mixer until well combined.

Cut pears in half and remove core. Stuff each pear with blue cheese mixture. Wrap each pear with one slice of bacon, crossing ends over top of pear in an X formation. Place on a baking sheet. Bake in a preheated 375°F oven 30-35 minutes or until pear is soft and bacon is crisp.

Meanwhile, toss arugula with shallots and vinaigrette. Divide evenly among 6 salad plates. Place pear in the center of salad and serve.
