
STUFFED TURKEY BURGERS



INGREDIENTS
- 1 1/4 pounds 93% extra lean ground turkey breast
- 1/2 cup finely chopped Fresh organic spinach leaves
- 1 organic large brown egg beaten
- 1 teaspoon chopped organic fresh baby dill
- 1/2 teaspoon organic ground black pepper
- 1/4 teaspoon Sea Salt freshly ground
- 5 tablespoons Boursin® spreadable herb & garlic cheese divided
- 1/4 cup roasted red peppers
- 10 Kalamata olives
- 2 tablespoons torn organic fresh Italian parsley
- 4 crusty hamburger buns sliced, toasted
- tomato slices
- cucumber slices
DIRECTIONS
Prepare grill to medium heat. In medium bowl, combine turkey, spinach, egg, dill, pepper and salt. Form into 8 thin patties. Place 1 tablespoon of cheese in center of 4 patties. Top with remaining patties and pinch sides to seal.
Place burgers on grill. Grill 6-8 minutes per side, turning once, or until internal temperature reaches 170°F on an instant read thermometer.
Meanwhile, in food processor or blender, combine roasted red peppers, olives, parsley and remaining 1 tablespoon cheese; salt and pepper to taste. Process until a paste forms. Spread paste on toasted buns. Top with tomato slices, burgers and cucumber slices.
