ROAST BEEF & BLUE CHEESE PANINI

INGREDIENTS
  • 6 tablespoons light mayonnaise
  • 2 tablespoons refrigerated prepared horseradish
  • 1 teaspoon organic extra virgin olive oil
  • 1 1/2 cups sliced onions
  • 1/2 12 ounce loaf Ciabatta bread
  • 1 pound thinly sliced roast beef
  • 1/2 cup Culinary Circle Blue Cheese Crumbles
  • 1 0.75 ounce package organic fresh arugula

DIRECTIONS

In small bowl, combine mayonnaise and horseradish; salt and pepper to taste. Set aside.

In small skillet, heat oil over medium-high heat. Add onions and sauté until golden brown (about 5 minutes). Set aside.

Slice bread into 4 sections. Slice each section in half horizontally. Spread horseradish sauce on all slices of bread. Assemble sandwiches by layering roast beef, onions, blue cheese and arugula.

Spray no stick olive oil spray on a preheated Panini grill. Place sandwiches on grill and spray tops of sandwiches. Close grill and cook until sandwiches are golden brown and cheese is melted (about 5-7 minutes).
