SPICY BLACK BEAN & CORN BURGERS

INGREDIENTS
  • 2 15 ounce can organic black beans rinsed and drained
  • 1/2-1 4 ounce can diced jalapeno peppers drained
  • 2 tablespoons hot salsa
  • 2 teaspoons organic ground cumin
  • 2 teaspoons chili powder
  • 1 cup organic super sweet whole kernel corn drained
  • 2/3 cup crispy Panko style plain bread crumbs
  • 2 tablespoons organic extra virgin olive oil
  • - guacamole hamburger buns, lettuce, tomato slices

DIRECTIONS

In large bowl, mash 1 cup beans; set aside. In food processor, combine remaining beans, jalapeƱos, salsa, cumin and chili powder. Process until mixture becomes a paste.

Transfer to large bowl with mashed beans; add corn and bread crumbs. Salt to taste; stir until well combined. Form into 6 patties

In large skillet, heat oil over medium-high heat. Add burgers; cook until browned on both sides (about 6-8 minutes). Spread guacamole on buns; top with burgers, lettuce and tomato.
