SPICY REFRIED BEANS

INGREDIENTS
  • 2 tablespoons organic extra virgin olive oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped poblano pepper
  • 1 fresh jalapeño pepper chopped (seeds removed for milder beans)
  • 1 teaspoon chili powder
  • 1 teaspoon organic ground cumin
  • 1/4 teaspoon organic cayenne pepper
  • 1 can organic vegetarian refried beans
  • 1/2 cup organic medium thick and chunky salsa
  • 1/4 cup chopped organic fresh cilantro

DIRECTIONS

1. In medium saucepan, heat oil over medium-high heat. Add onions and peppers; salt and pepper to taste. Sauté until onions are softened (about 5-7 minutes).

2. Stir in chili powder, cumin and cayenne; sauté 1 minute. Add beans and salsa; stir to combine.

3. Cook until heated through, stirring frequently. Remove from heat; stir in cilantro.
