
SPICY REFRIED BEANS



INGREDIENTS
- 2 tablespoons organic extra virgin olive oil
- 1/2 cup chopped onion
- 1/2 cup chopped poblano pepper
- 1 fresh jalapeño pepper chopped (seeds removed for milder beans)
- 1 teaspoon chili powder
- 1 teaspoon organic ground cumin
- 1/4 teaspoon organic cayenne pepper
- 1 can organic vegetarian refried beans
- 1/2 cup organic medium thick and chunky salsa
- 1/4 cup chopped organic fresh cilantro
DIRECTIONS
1. In medium saucepan, heat oil over medium-high heat. Add onions and peppers; salt and pepper to taste. Sauté until onions are softened (about 5-7 minutes).
2. Stir in chili powder, cumin and cayenne; sauté 1 minute. Add beans and salsa; stir to combine.
3. Cook until heated through, stirring frequently. Remove from heat; stir in cilantro.
