TEX-MEX KIDNEY BEAN SOUP

INGREDIENTS
  • 1 pound 93% Angus Lean Ground Beef
  • 1 cup chopped onion
  • 1 cup chopped poblano pepper
  • 1 tablespoon organic ground cumin
  • 2 tablespoons chili powder
  • 1/2 teaspoon organic cayenne pepper
  • 3 cups Organic Chicken Broth
  • 3 cups Organic Dried Light Red Kidney Beans
  • 1 can organic tomato sauce
  • 1 can organic diced tomatoes with green chiles
  • 1/4 cup organic fresh cilantro
  • shredded cheese, diced avocado, tortilla chips

DIRECTIONS

1. In large saucepan or Dutch oven over medium-high heat, cook and crumbled beef, onion, pepper, cumin, chili powder and cayenne pepper until no longer pink; salt and pepper to taste.

2. Add in broth, cooked beans, tomato sauce and tomatoes. Bring to a simmer; simmer 10-15 minutes.

3. Remove from heat and stir in cilantro. Serve garnished with cheese, avocado and chips, if desired.
