
TEX-MEX KIDNEY BEAN SOUP



INGREDIENTS
- 1 pound 93% Angus Lean Ground Beef
- 1 cup chopped onion
- 1 cup chopped poblano pepper
- 1 tablespoon organic ground cumin
- 2 tablespoons chili powder
- 1/2 teaspoon organic cayenne pepper
- 3 cups Organic Chicken Broth
- 3 cups Organic Dried Light Red Kidney Beans
- 1 can organic tomato sauce
- 1 can organic diced tomatoes with green chiles
- 1/4 cup organic fresh cilantro
- shredded cheese, diced avocado, tortilla chips
DIRECTIONS
1. In large saucepan or Dutch oven over medium-high heat, cook and crumbled beef, onion, pepper, cumin, chili powder and cayenne pepper until no longer pink; salt and pepper to taste.
2. Add in broth, cooked beans, tomato sauce and tomatoes. Bring to a simmer; simmer 10-15 minutes.
3. Remove from heat and stir in cilantro. Serve garnished with cheese, avocado and chips, if desired.
