CHICKEN AND BROCCOLI STIR-FRY

INGREDIENTS
  • 3 tablespoons organic coconut oil
  • 1 pound boneless, skinless chicken breasts thinly sliced
  • 1 tablespoon minced garlic divided
  • 1 tablespoon minced gingerroot divided
  • 1 16 ounce package organic frozen broccoli florets thawed and drained
  • 1 red bell pepper sliced
  • 1/4 cup liquid amino acid
  • 2 tablespoon siracha sauce

DIRECTIONS

In wok or large skillet, heat 2 tablespoons oil over high heat; add chicken, half the garlic and half the ginger. Salt to taste; stir-fry until cooked through. Remove from wok

Add remaining oil to wok; add broccoli, red pepper, remaining garlic and ginger; stir-fry 2 minutes

Add chicken, amino acid and Sriracha; stir-fry until sauce has thickened slightly (about 3-5 minutes).
