BERRY CINNAMON QUICK BREAD

INGREDIENTS
  • 2 cups unbleached all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1/2 cup organic butter softened
  • 1 cup organic light brown sugar divided
  • 2/3 cup lowfat buttermilk
  • 2 organic large brown eggs beaten
  • 1 teaspoon organic pure vanilla extract
  • 2 teaspoons organic ground Saigon cinnamon
  • 1 1/2 cups frozen organic berry blend

DIRECTIONS

In medium bowl, combine flour, baking soda and salt; set aside.

In large mixing bowl, combine butter and ¾ cup sugar. Using an electric mixer on medium speed, beat until light and fluffy. With mixer running, slowly add in buttermilk, eggs and vanilla.

Slowly add in flour mixture, scraping bowl occasionally. Transfer half of batter to a greased 9x5-inch loaf pan. Combine remaining ¼ cup sugar and cinnamon together; sprinkle half over batter and top with half the berries. Repeat with remaining batter, cinnamon sugar and berries.

Bake in a preheated 350°F oven 70-75 minutes or until knife inserted in center comes out clean. Remove from oven; let cool in pan 10 minutes. Remove from pan and transfer to a cooling rack.
