
BARLEY & BEAN SALAD



INGREDIENTS
- 1 cup pearl barley
- 1 15 ounce can organic dark red kidney beans rinsed and drained
- 1 15 ounce can organic garbanzo beans rinsed and drained
- 2 cups diced red, green and/or yellow bell peppers
- 1/2 cup diced red onion
- 4 ounces Culinary Circle Crumbled Feta Cheese
- 3/4 cup organic roasted garlic balsamic vinaigrette
- 1 0.75 ounce package organic fresh Italian parsley chopped
DIRECTIONS
Prepare barley according to package directions; cool completely.
Combine all ingredients in large mixing bowl; salt and pepper to taste. Toss to coat.
Refrigerate, covered, several hours or overnight.
