BARLEY & BEAN SALAD

Serves : 16 (1/2 cup) servings

INGREDIENTS
  • 1 cup pearl barley
  • 1 15 ounce can organic dark red kidney beans rinsed and drained
  • 1 15 ounce can organic garbanzo beans rinsed and drained
  • 2 cups diced red, green and/or yellow bell peppers
  • 1/2 cup diced red onion
  • 4 ounces Culinary Circle Crumbled Feta Cheese
  • 3/4 cup organic roasted garlic balsamic vinaigrette
  • 1 0.75 ounce package organic fresh Italian parsley chopped

DIRECTIONS

Prepare barley according to package directions; cool completely.

Combine all ingredients in large mixing bowl; salt and pepper to taste. Toss to coat.

Refrigerate, covered, several hours or overnight.
