SLOW COOKER CHICKEN

Serves : 6 servings

INGREDIENTS
  • 1 (3-4 pound) whole chicken
  • 1 teaspoon lemon pepper seasoning
  • 1 medium onion cut into 6 wedges
  • 2 cups baby carrots cut in half
  • 3 medium organic russet potatoes cut into 1 1/2 inch chunks
  • 3 cloves garlic smashed
  • 1 cup organic low sodium chicken broth
  • 2 tablespoons corn starch

DIRECTIONS

Rinse chicken and pat dry. Sprinkle inside and outside of chicken with lemon pepper seasoning. Place chicken in large slow cooker.

Place onions, carrots, potatoes and garlic around chicken. Add chicken broth to bottom of cooker. Cover and cook on HIGH for 6-7 hours.

Suction juice out of slower cooker and transfer to a small saucepan (approximately 2 cups); skim off fat.

In small bowl, whisk corn starch and ΒΌ cup cold water to create a slurry. Whisk the cornstarch slurry into the juices. Bring to a boil. Boil 1 minute.

Serve chicken with carrots, potatoes and chicken gravy.
