SAVORY MUSHROOM & KALE HAND PIES

Serves : 6 servings

INGREDIENTS
  • 1 tablespoon pure vegetable oil
  • 1 3.5 ounce package shiitake mushrooms stems removed, sliced
  • 1/4 cup sliced shallots
  • 3 cups chopped kale leaves
  • 1/8 teaspoon cayenne pepper
  • 1 15 ounce package refrigerated pie crust
  • 3/4 cup fancy shredded triple Cheddar cheese
  • 1 large egg

DIRECTIONS

In large skillet, heat oil over medium-high heat. Add mushrooms and shallots; salt and pepper to taste. Saute until softened and slightly browned (about 3-5 minutes). Add kale and cayenne; continue sautéing until kale is wilted. Set aside to cool slightly.

Cut 6 (4-inch) circles from each pie crust (you will get 5 from each crust; press remaining dough together and roll out to cut out remaining circle).

Divide filling among 6 circles; top with cheese. Moisten edges of dough with water. Place remaining circles over filling. Press edges together to seal; crimp with a fork.

Place pies on a greased large baking sheet; cut 3 small steam slits in tops of pies. In small bowl, combine egg with 1 tablespoon water; Brush egg wash on top of pies.

Bake in a preheated 375°F oven 15 minutes or until golden brown and bubbly.
