STEAMED WHITE FISH

with Tomatoes

INGREDIENTS
  • 1 pound frozen Pacific whiting fillets thawed
  • 1/2 teaspoon dried thyme leaves
  • 1/2 teaspoon dried rosemary leaves crushed
  • 1 14.5 ounce can diced tomatoes with garlic & onion undrained

DIRECTIONS

Sprinkle top of fish with thyme, and rosemary; salt and pepper to taste.

Pour tomatoes in a medium skillet with cover. Bring to a boil; place fish fillets over tomatoes. Cover and reduce heat; simmer for 8-10 minutes or until fish flakes easily with a fork.

Remove fish from pan. Remove tomatoes from pan with a slotted spoon and serve over fish.
