CAESAR SALAD

with Grilled Shrimp

INGREDIENTS
  • 1 16 ounce package frozen 16-20 count peeled & deveined tail-on cooked shrimp thawed
  • 4 bamboo skewers soaked in water 30 minutes
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons lemon & pepper seasoning
  • 1 package Romaine lettuce
  • 1/2 cup prepared Caesar dressing
  • 1/2 cup finely shredded Culinary Circle Parmesan Cheese
  • - restaurant style Caesar croutons

DIRECTIONS

Prepare grill to medium heat. Place shrimp on skewers.

In small bowl, combine oil, lemon juice and lemon & pepper seasoning; brush on shrimp. Place shrimp on grill; grill 4-5 minutes or until heated through, turning once.

Meanwhile, in large bowl combine lettuce, dressing, cheese and croutons; toss to coat. Divide among 4 large salad bowls or plates. Top with grilled shrimp.
