
SKILLET POTATOES II



INGREDIENTS
- 2 pounds red potatoes
- 1/2 pound bacon chopped
- 1/2 medium yellow onion chopped
DIRECTIONS
Scrub potatoes to remove any dirt; dry with clean paper towels. Pierce potatoes with fork in several spots.
Place potatoes on a microwaveable plate. Microwave (HIGH) 5-7 minutes, turning occasionally, until a fork can easily be inserted into center of potato. Let cool slightly; cut into 1-inch cubes.
Meanwhile, in large skillet over medium-high heat, cook bacon until slightly crispy; add in onions and potatoes. Salt and pepper to taste. Cook potatoes, turning occasionally, allowing them to brown (about 10-15 minutes).
