
CHICKEN & VEGETABLE STIR-FRY FOR ONE



INGREDIENTS
- 1 4 ounce boneless, skinless chicken breasts thinly sliced
- 2 tablespoons teriyaki marinade & sauce
- 2 teaspoons Culinary Circle Toasted Sesame Oil divided
- 1/4 cup chopped onion
- 1/2 teaspoon chopped garlic
- 1 1/2 cups chopped fresh vegetables
- - cooked white or brown rice
DIRECTIONS
In small bowl, combine chicken and teriyaki marinade. Set aside.
In wok or large sauté pan, heat 1 teaspoon oil over high heat. Add onion and garlic; stir-fry 1-2 minutes. Add chicken, stir-fry 2-3 minutes or until cooked through. Remove from pan; keep warm.
Add remaining 1 teaspoon oil to wok. Add vegetables; stir-fry 5-6 minutes or until desired doneness. Add 1-2 tablespoons water, if needed to steam vegetables.
Add chicken and marinade to wok; stir-fry until sauce is glazed. Remove from heat; drizzle with additional sesame oil, if desired. Serve with cooked rice.
